Sumatra Mandheling Gayo Highland coffee is processed very carefully. It starts with the selection of red cherries on the tree. The cherries are picked at day time and are processed later in the evening by the processing facility. The coffee arrives at the processing facility as wet parchment (already hand-pulped by the smallholder). The time difference between picking and processing is a maximum of 12 hours. Once received by the processing facility the parchment is wet hulled (giling basah), polished and graded. The last defective beans are removed by hand. To guarantee the lowest number of defects possible the coffee is triple picked.
